Ingredients

1 cup + 3 tbsp spelt flour or whole wheat pastry flour

1 tsp baking powder

1/2 tsp baking soda

1/4 cup brown sugar or coconut sugar

1/4 tsp salt

1/3 cup maple syrup

1 tsp blackstrap molasses

1 1/2 tsp vanilla extract

1/4 cup natural nut butter (peanut butter used in the example)

1/3 cup dairy-free chocolate chips

1/4 cup walnut pieces

2 tbsp unsweetened almond milk

Methode
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Spoon your flour into a measuring cup and sift this along with all other dry ingredients (baking powder, baking soda, sugar, and salt) through a mesh strainer into a medium bowl. This step is crucial to prevent the flour from being too packed, which can impact the chew and texture of the cookies.
  3. Add in the maple syrup, almond milk, vanilla extract, blackstrap molasses, and peanut butter to the bowl. Using a large spoon, combine these ingredients to form the cookie dough.
  4. Fold in the walnut pieces and dairy-free chocolate chips into the dough.
  5. With slightly damp hands, roll the dough into balls and place them on the prepared baking sheet.
