Ingredients

1 1/2 tsp active dry yeas

t⁣1/2 cup hot water (ideally 105-110 F)

⁣1 cup 1:1 gluten free flour (must have xanthan gum)

⁣1/4 tsp salt⁣

1 tsp sugar⁣

Methode
  1. Add the yeast into a medium glass bowl along with the hot water. Allow the yeast to proof for 6-10 minutes. ⁣
  2. While proofing mix together the flour, sugar, and salt in a small bowl. Add to the yeast bowl and gently fold together with a spatula until the dough starts to crumble and can start forming into a ball. Transfer to a lightly floured surface and knead until the dough fully comes together (about 2 minutes). I was careful to not over knead since we’re using gluten free flour and it provided a super airy texture. Place in a lightly oiled bowl, cover with a towel and allow to proof for 45 minutes to an hour. The dough will expand about double in size. ⁣

  3. Preheat oven to 450 F.⁣

  4. Bring a large pot of water ~6 cups to a boil and add 3 tbsp baking soda. ⁣

  5. After the dough has proofed cut the dough into 4 equal parts and roll each section into long strips. Cut into small bite sized pieces and transfer to the boiling water with baking soda. Allow the boil for 30 seconds and remove with a slotted spoon or strainer. ⁣
  6. ⁣Add the pieces to a parchment lined baking sheet, spread evenly and spray with cooking oil to help the browning process. Top with salt or everything but the bagel seasoning. Bake for 12-13 minutes until golden brown. ⁣⁣
  7. Serve immediately with your favorite dipping sauce. Enjoy!
